Arequipa is built from sillar, a white volcanic stone quarried nearby, and sits at 2,335 metres under the cone of El Misti. Its centre has been World Heritage since 2000.

The Santa Catalina convent, founded in 1579, is a walled quarter of ochre and blue lanes that stayed shut to outsiders until 1970. Colca Canyon, where condors ride the morning thermals, is a night away.
